Fall Harvest Pizza

Ingredients
3 tbsp. Kowalski's Extra Virgin Olive Oil, divided
4 oz. (about 2 cups) chopped kale
1 tbsp. chopped garlic
½ tsp. dried thyme
1 loaf Manoucher Rosemary and Onion Bread
6 oz. Kowalski's Fresh Mozzarella
- freshly grated Kowalski's Parmesan Cheese, to taste
- freshly ground Kowalski's Sea Salt and Black Peppercorns, to taste
Directions
  1. Preheat oven to 400°.
  2. In a medium skillet, heat 1 tbsp. oil over medium-high heat.
  3. Add kale, garlic and thyme; sauté for 2 min.
  4. Remove kale mixture from heat; set aside.
  5. Brush bread with remaining 1 tbsp. oil; top evenly with mozzarella.
  6. Top pizza evenly with cooked kale mixture, roasted squash and onions.
  7. Bake in preheated oven for 10 min.
  8. Drizzle with oil. Sprinkle with Parmesan, and season to taste with salt and pepper.
